BLACK BAR & GRILL’S DANY KARAM ANNOUNCED AS 2022 SYDNEY AUTUMN RACING CARNIVAL CULINARY AMBASSADOR

The Australian Turf Club (ATC) welcomes the return of award-winning Executive Chef of The Star Sydney’s BLACK Bar & Grill, Dany Karam, as the Culinary Ambassador for its famous Sydney Autumn Racing Carnival across March and April 2022.
The Star’s acclaimed chef will be crafting bespoke menus for trackside guests, creating a world-class dining experience across key carnival dates including an exquisite three-course luncheon for the Pink Fashion Lunch supporting the McGrath Foundation on the carnival opener Chandon Ladies Day, Saturday 12 March at Rosehill Gardens and The Star Championships at Royal Randwick.
Karam’s menu creations will also be served at Royal Randwick in the sophisticated trackside venue The Conservatory across the famed The Star Championships Day 1 (2 April) and The Championships, Day 2 – Longines Queen Elizabeth Stakes Day (9 April).
At age 16, Karam began his culinary career in his home country of Lebanon with five years of intense training. Following a move to France where Karam enhanced his skills and gained a deeper love and understanding of modern European cuisine, he accepted the role of Executive Chef at the BLACK Bar & Grill in 2014.
Returning to the chef partner position after wowing trackside guests with his indulgent fare at the 2020 Sydney Spring Everest Carnival, Karam explains, “I am thrilled to be partnering with the Australian Turf Club on its trackside menus once again. I’m looking forward to showcasing some of Australia’s best local producers with a bold menu full of the indulgent, rich flavours BLACK Bar & Grill is synonymous with.”
“This year’s menu will include inspiration from some of our favourite dishes at BLACK Bar and Grill and honour my Lebanese heritage to delight diners at Royal Randwick and Rosehill Gardens.
