SPIRITS
Aperol
Aperol is the perfect aperitif. Bright orange in colour it has a unique bitter-sweet taste deriving from a secret recipe that has remained unchanged since its creation. An infusion of precious primary components, many herbs and roots in a perfectly balanced combination. Aperol’s strength is its low alcohol content, only 11%.
Grainshaker Australian Vodka
GRAINSHAKER defies the category norms by celebrating the uniqueness of Australian grains and challenging vodka’s cold and pretentious personality.
Flavour: smooth caramel and vanilla grain with a soft finish. Soft all-rounder, the perfect medium to bring all the flavours in a cocktail together harmoniously when paired with Steak Tartare, Caviar, Kingfish ceviche, Pickled Herring, Polish Dumpling, Root Vegetables.
NED Australian Whisky
Australia deserves a whisky that reflects its people. One that, like its namesake, forges its own story on Australian land. Full of strength and character; NED is the distillation of the country that inspires it.
Aroma: Coconut and vanilla with hints of stone and dry fruit. Moves into the rich grain with hints of chocolate, then dry at the end
Flavour: Sweet oak moving into spicy grains, with a hint of dried fruit. Then mocha and oak, with vanilla and dry coconut. The finish is spicy and clean heat, smooth but powerful. Long after flavour of sweet oak and dark chocolate
Pair with BBQ’ed meat, smoked meats, mushrooms and root veg, rich meat cuts of pork, cured pork, prosciutto and salami, chocolate fondue with vanilla ice cream.

Petaluma 'Hanlin Hill' Riesling
Region: Clare Valley

Tasting Notes: The Hanlin Hill vineyard in the Clare Valley was planted in 1968 following the natural contours of the vineyard. The slate geology and climate of the site are perfect for the production of the highest quality Riesling with a backbone of high natural acidity and intense rich lime flavours found in Petaluma Riesling

Tasting Notes: It is appropriate that the three traditional red varieties of the Barossa – being Grenache, Shiraz and Mourvedre come together to make ‘one’ very flavoursome and complex Barossa red wine – namely “The Holy Trinity”.

Petaluma Yellow Label Coonawarra Merlot
Region: Coonawarra

Tasting Notes: The famed Evans Vineyard was planted in 1968 and lies in the heart of Coonawarra’s famous Terra Rossa red clay over limestone soils. With free draining soils and the moderating influence of the cold Southern Ocean on the climate the vineyard produces elegant and long-lived wines distinctive of the region.

Houghton's 'Jack Mann' Cabernet Sauvignon

Tasting Notes: A fine wine of elegance, fruit flavour and power balanced by firm fine grained tannins, Jack Mann is the finest Cabernet produced by Houghton. Accordingly, it is named after legendary Houghton winemaker, Jack Mann who presided over the winemaking for 51 consecutive vintages at Houghton.

St Hallett 'Blackwell' Shiraz
Region: Barossa
Vintage: 2018
Tasting Notes: This wine was first released in 1994, in honour of Stuart Blackwell, winemaker for more than three decades and a tireless contributor to the St Hallett story. The fruit is sourced predominately from Northern Barossa with the red brown clay soils creating wines with hallmark characteristics of black plum, cherries and dark chocolate.
