Dessert offers a moment of theatre, beginning with Guinness ice cream served with raspberry curd and chocolate cherry granola. The Earl Grey mousse with pickled figs and whipped condensed milk delivers a delicate finale, while the toasted white chocolate cremeaux with mandarin peel purée and macadamia crumble brings a warm richness perfect for Autumn days.

At Rosehill Gardens, the Winning Post Restaurant captures the energy and colour of the Autumn Carnival through a menu that blends modern technique with expressive flavours.
Highlights include seared yellowfin tuna with tomato vinaigrette and a black garlic crisp, slow roasted sirloin with a rich mushroom salad, and salt and pepper smoked quail with nam jim and coriander slaw. For a lighter option, heirloom tomato with basil and straciatella offers a fresh and vibrant start.
Desserts are crafted with equal flair. The red fruit parfait with passionfruit curd and guava gel is a striking seasonal hero, while the Thai tea cremeux with toasted peanuts and meringue shards provides a playful twist. The Yamazaki nama with vanilla bean namelaka, hazelnut oil and shortcake brings a luxurious finish with its silk smooth texture and warm nutty notes. Those seeking something comforting will enjoy the malt pudding with buttermilk sorbet and orange polenta cake.
Grandview Restaurant at Royal Randwick
For guests who enjoy long lunches and shared dining, Grandview Restaurant presents two seasonal menus that celebrate both French and Italian inspiration.
The French menu features artisan bread, Pate de Champagne, chilled prawns and oysters to start, followed by pan roasted duck breast with puy lentils and slow roasted chateaubriand with sautéed mushrooms.
The Italian offering showcases burrata with heirloom tomatoes, grilled banana prawns with nduja butter, and hearty mains such as pork and fennel ragu with porcini and pecorino.
Both menus encourage relaxed, communal dining throughout the Autumn Carnival.
