Celebrity Chef George Mirosevich Brings Signature Dish to the Peacock Lounge at Sydney Everest Carnival

Sydney’s racing season is about to get a bold new flavour. Returning to Royal Randwick this September,  the Peacock Lounge, presented by Balter continues to evolve as one of the Carnival’s most vibrant destinations, transforming the experience into a quirky, immersive destination that promises energy, entertainment and unforgettable race day fun.

Located on the ground floor of the iconic WINX Stand, the Peacock Lounge, presented by Balter will be open to all ticket holders across the six spectacular days of the world-famous Sydney Everest Carnival at Royal Randwick.

Bringing the spirit of spring together, this space is designed to be the ultimate social hub – a place to gather with friends, share in the thrill of the races and expect great food and drink options, specially curated to fuel your raceday fun with flavour and flair.

Culinary Star Power

George Mirosevich Elevates the Carnival

Adding even more flavour to the excitement, the Peacock Lounge will serve up a signature creation by celebrity chef George Mirosevich – the indulgent Balter Beer-Battered Lobster Roll, crafted exclusively for racegoers to enjoy throughout the Carnival.

George’s culinary journey began at just 15 in Port Stephens, before refining his skills at Muse Restaurant in the Hunter Valley, where he earned the prestigious Brett Graham Scholarship. His talent took him abroad to London’s acclaimed two-Michelin-starred restaurant, The Ledbury, before returning to Sydney to contribute to some of the city’s most celebrated kitchens, including Sepia and Bistro Guillaume.

In 2019, George opened The Signal Box and just three years later co-founded Bare Chefs, a trailblazing venture reshaping the way Australians experience food – from luxury private dining to innovative, ready-to-enjoy meals delivered across Newcastle and Sydney. With a clientele that spans The Kid Laroi, Shaquille O’Neal, the Hemsworth family and the judges of MasterChef Australia, George has firmly established himself as one of the country’s most sought-after chefs.
